Breakfast is the most important meal of the day.
Yes, I know this. But, I am not a breakfast fan. I don’t usually like to eat in the morning. I’d much rather drink a cup of coffee or tea (or even a glass of water) and call it good.
However, growing up, I remember waking up to the aroma of my mother cooking the family something delicious almost every day. And if it was Korean food, all the better!
I don’t have the energy to be so creative that early in the morning. So I stick with simple things. Yogurt with pumpkin flax granola. Cinnamon raisin toast with cream cheese. French toast.
But my son’s favorite breakfast is a serving of floppy eggs (aka scrambled eggs), with a dollop of catsup on the side. (Yes, that’s how I ate eggs when I was a kid, too. These days, I prefer hot sauce.) My little guy loves fruit, so I always try to include apple slices or a banana with his meal.
This day, I made him a fruit salad of raspberries, blackberries and strawberries. While I was at it, I also put the berries on skewers so he could take them for his kindergarten snack. (Thanks, Julie, for that idea!)
Is it weird that I am actually looking forward to making him nutritious and fun lunches to take to school next year? I’ve already started a Pinterest board devoted to bentos. There’s not much more left to do then, right? 😉

Fruit kebabs, what a great idea. This looks delicious!
Oatmeal is a good one. You can even cook it in the crock pot over night in apple juice (organic of course) My daughter loves it and you can change it up with so many different toppings, honey, berries, cinnamon, coconut flakes etc.
I make a 5 portion frittata on Sunday, cut it up, and wrap each individually. That way all I have to do it pop it in the microwave to heat it up. Gotta have protein in the morning!
I don’t think that’s weird at all. I don’t even have kids and I think about stuff like that. 😉
